Tomato & Mussel Soup

 

WHAT YOU NEED:

1kg cleaned mussels

400 grams peeled diced tomatoes

shallots diced

chicken stock cube

mixed herbs

water

salt & pepper

HOW TO MAKE IT:

Clean outside of shell

Soak mussels in hot water for 10 min until they open up

put in a large pot and cover with cool water

add tomatoes, stock cube, shallots, herbs, salt & pepper to taste

Bring to the boil on high, then simmer for - 10 min - stirring regularly

 

PRESENTATION:

Serve with a swirl of sour cream nad/or parsley sprinkled on top
