Stuffed Crab

for 2 people

WHAT YOU NEED:

2 average size crabs ( i like blue swimmer for this)

2 Potatoes - sml, boiled and diced

2 Tomatoes - sml and diced

Shallots - diced

milk - dash

red paprika powder

grated cheese - mozarella is best

Boiled rice - basmati is nice and light

parsley - chopped fine

 

HOW TO MAKE IT:

Clean out middle of crab careful not to break top shell or legs

Slice crab meat in frypan on low heat with potatoes, shallots, tomatoes and a dash of milk

Stir until starts to brown a little

Set up plate with bed of white cooked rice and place crab shell upside down

Spoon mixture into shell and sprinkle with grated cheese

put in oven until cheese melts and goes golden

PRESENTATION:

Sprinkle with paprika and parsley
