Stuffed Capsicums

 

WHAT YOU NEED:

green capsicum (mild peppers).

mince (i used beef)

diced tomatoes

diced onions

mushroom pieces

cooked rice

mozarella cheese

HOW TO MAKE IT:

cut in half length ways and scrape insides and wash

in a pan cook mince, onions, diced tomatoes and mushrooms

add in cooked rice

spoon mixture into capsicum halves

sprinke with mozarella cheese

cook in moderate oven till cheese melts

VARIATION:

Add some red wine, garlic, other spices to taste

SERVING SUGGESTION:

Served with mash potatoe, peas and corn
