This is a Danish dessert. Citrus pudding if you like a translation.
It is light and fluffy and very delicious especially with some cream.
WHAT YOU NEED:
2 eggs
1 1/4 cups sugar
grated rind from one lemon
4 sachets gelatine
1 spoon warm water
2 1/2 cups cream (whipping cream)
HOW TO MAKE IT:
Wash the gelatine and put in cold water for 20-30mins. Separate eggs and put yolks in a bowl, whip together with sugar until light and fluffy. Disolve the gelative in as little water as possible on a warm stove. Add the sugar and egg yolk mix and stir. Whip togther the grated lemon and cream. Then mix in the egg whites and whip till light then add to the gelatine mixture. Still on warm heat stir till it gets stiff then pour into dish and leave inthe fridge for 2-3 hours.
PRESENTATION:
I like to have whipped cream on top perhaps a little extra grated lemon for decoration
