PIKELETS
Basically these are little pancakes that are great to have as a snack or for breakfast.
WHAT YOU NEED:
1 cup milk
½ cup sugar
1 egg
½ teasp. Vanilla flavour
1 cup SR flour
1 table sp. Butter
½ teasp. Baking soda
extra butter
HOW TO MAKE IT:
Beat milk, sugar, egg and vanilla in a bowl. Add sifted flour and baking soda. Add melted butter.
Mixture should be fairly liquid. Heat frypan and grease with butter. Spoon mixture into pan and brown each side of pikelet.
PRESENTATION:
I like to eat them with just butter on top or sometimes sugar and lemon juice.
VARIATIONS:
You can have honey, jam, cream or anything really you like.
