Fiesta Chicken

Mexican bases chicken dsh that I have modified.

Original version from "Amigos" Mexican in Wollongong is very yummy !!!

 

WHAT YOU NEED:

1 BBQ chicken (you can use boiled but BBQ one is faster and gives better flavour)
1-2 tubs light sour cream (one tub to be good two to make it yummy & creamy)
Chopped onion
Chopped capsicum (some green & red preferably)
fresh mushrooms (if you like)
pepper to taste

HOW TO MAKE IT:

Chop onion and cook in fry pan till soft
Break up / cut chicken into bite size pieces and add to onion
Chop up capsicum and mushrooms and add to pan also
Let vegies go soft before adding sour cream
Add pepper to taste

PRESENTATION:

Serve with white rice

VARIATIONS:

Cooking onion in Garlic oil is nice
A little white wine can also add a nice flavour
Add different veggies if you like too.
I have used this as a filling in Vol au vonts, Enchiladas, Tacos &
Toasted sandwiches with melted cheese
