DAMPER

This is a typical Australian type of bread. originally made by the early Australians

as it was simple to make and needed few ingredients.

WHAT YOU NEED:

3 cups SR flour

1 ½ teasp. Salt

90g Butter

½ cup milk

½ cup water

extra flour

 

HOW TO MAKE IT:

Sift flour and salt, rub in butter. Make a well in the centre of the dry ingredients and add combined water and milk.

Mix lightly with a knife in a cutting motion. Knead lightly on a floured surface into rounded shape.

Place on greased tray and cut deep an X on top. Brush with milk and sift flour on top.

Bake in a hot oven for 10 minutes till golden brown then reduce heat to moderate and cook a further 15 minutes.

 

PRESENTATION:

Serve with butter as a side to a meal or as a starter.
